What's in the oven? Sweet Potato Pie!

I know pumpkin pie is probably the most popular pie during this time of year. My favorite is my dad's sweet potato pie. He makes it every Thanksgiving, but I couldn't wait until then so I made one today. I made some substitutions and I put them in parenthesis. I used a gluten-free crust from Whole Foods. No one in my family is on a gluten-free diet. I just like the way it tastes. It's buttery and flaky. Just really yummy. And I used pumpkin pie spice instead of cinnamon and nutmeg. I didn't measure that I just used my taste buds to judge how much to put in there. But if you want to follow the recipe I have placed it below. Recipe from Allrecipes.com.

Ingredients

* 1 (1 pound) sweet potato
* 1/2 cup butter, softened
* 1 cup white sugar (Splenda Sugar Blend)
* 1/2 cup milk (evaporated milk)
* 2 eggs
* 1/2 teaspoon ground nutmeg
* 1/2 teaspoon ground cinnamon
* 1 teaspoon vanilla extract
* 1 (9 inch) unbaked pie crust


Directions

1. Boil sweet potato whole in skin for 40 to 50 minutes, or until done. Run cold water over the sweet potato, and remove the skin.
2. Break apart sweet potato in a bowl. Add butter, and mix well with mixer. Stir in sugar, milk, eggs, nutmeg, cinnamon and vanilla. Beat on medium speed until mixture is smooth. Pour filling into an unbaked pie crust.
3. Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes, or until knife inserted in center comes out clean. Pie will puff up like a souffle, and then will sink down as it cools.

Yummy Tomasello Wines!

I was in Whole Foods not too long ago. I like to go there because they have certain things I like that aren't in other stores and they always have samples out for you to taste. A man stopped me and asked me to try some wine. I figure I'm finished with work and I could use a drink. So, I tried the blueberry, the cherry, the blackberry and pomegranate. He explained to me that there wasn't any sugar in the wine and it's full of antioxidants. I tried them all. They were all sweet except for the cherry which was bitter. Didn't like that one at all. I had a hard time choosing between the blackberry and blueberry. He gave me more wine to sample. I already had a buzz and was giggling much too much. I decided on the blackberry because it was the sweeter of the two. I love a sweet wine. So, if you're ever in Whole Foods look for Tomasello Wines. They are yummy and only about $10.00 a bottle. Chigirl recommends this recipe: Sugar-Free Apple Pie

This was a very quick and simple pie to make. I used gluten-free pie shells from Whole Foods. I'm not on a gluten-free diet. I just like the way the pie shells taste. There are 2 in a package. So, I just put the other one on top after I added the apples. Instead of just plain ground cinnamon I added Spice Islands Pumpkin Pie Spice. I have found that I like that one the best. I used agave nectar instead of artificial sweetener. I didn't measure I just added enough until I felt it was sweet enough for my taste. An I used vegan spread instead of butter. The result is a great tasting you would never know it didn't have sugar pie;-) The buttery taste of the gluten-free crusts makes it taste absolutely incredible.
